Bacon Toad In The Hole Recipe
Ingredients
1/2 cup all purpose flour
Salt and pepper
1 egg
2/3 cup milk
4 fatty bacon slices
Directions
Sift the flour into a bowl and add salt and pepper.
Make a well in the centre and break in the egg.
Gradually stir in half the milk.
Beat the batter with a wooden spoon until smooth.
Stir in the remaining milk.
Remove the rind from the bacon and chop roughly.
Place in a roasting tin.
Cook the bacon in a preheated moderately hot oven (200°C/400°F, Gas Mark 6) for 5 minutes.
Pour over the batter and cook for 20 to 30 minutes until the batter is cooked and well risen.
Serve immediately with grilled tomatoes.
Cooking time: 25 to 35 minutes Variation: Sausages can be used instead of the bacon, but these should be pre cooked for 15 minutes before adding the batter.
