Bacon Spinach Junior Club Sandwiches Recipe
Ingredients

| 1 medium-size onion, finely chopped | ||
| 1/2 cup mayonnaise or salad dressing | ||
| Red wine vinegar | 2 Tablespoon | |

| V2 teaspoon salt | ||
| Pepper | 1 Dash | |
| 8 slices firm white bread, toasted | ||
| Spinach leaves | 4 | |
| Cherry tomatoes | 12 | |

Directions
1 Fry bacon until crisp in large skillet; drain on paper toweling. Remove all but about 1/4 cup fat from pan. Break eggs, 1 at a time, into hot fat; fry until firm, breaking yolks with a pancake turner, and turning them over. Transfer to warm platter. Remove and discard all but 1 tablespoon of the fat from pan.
2 Cook onion in remaining fat until tender. Remove from heat. Stir in mayonnaise or salad dressing, vinegar, sugar, salt and pepper.
3 Spread mayonnaise mixture on each slice of toast. Cover four slices with a layer of spinach leaves, 3 slices bacon, a fried egg and top with more spinach leaves. Cover with remaining slices of toast, mayonnaise-coated side down. With serrated knife, cut sandwiches into 4 triangles.
4 Alternately spear triangles with cherry tomatoes on 8-inch skewers.
