Bacon Lettuce Tomato Rice Recipe

Ingredients

 
1/4-lb. sliced bacon, diced
 
1 cup Brand Rice
 
2-1/2 cups water
 
1 teaspoon salt
 
1 /2 cup dairy sour cream
 
1 teaspoon salt
 
2 medium tomatoes, diced
 
1/2 medium head lettuce, shredded
 
2 tablespoons chopped green chilies

Directions

In large skillet or 2-quart saucepan, fry bacon until crisp.
Remove bacon bits from pan.
Pour off all but 2 tablespoons bacon drippings.
Add rice, water and 1 teaspoon salt to drippings; stir.
Bring to a boil.
Cover and simmer about 20 minutes.
Remove from heat.
Let stand, covered, until all liquid is absorbed, about 5 minutes.
Stir in sour cream and 1 teaspoon salt.
Lightly stir in tomatoes, lettuce and green chilies.
Heat through.
Sprinkle with bacon bits.
