Center cut bacon - 1 pound, thick
 
Packed brown sugar - 1/4 cup
 
Maple syrup - 2 tablespoons
 
Rice vinegar - 2 tablespoons
 
Black pepper - to taste

Directions

GETTING READY
1) Preheat oven to temperature of 350 degrees.

MAKING
2) On a wire rack that has been placed in an ovenproof dish, place the bacon slices in a neat pattern. Ensure that they are not overlapping.
3) Place the bacon in the preheated oven and let it cook for about 10 minutes.
4) In a small mixing bowl, put the brown sugar, maple syrup, vinegar and black pepper. Mix well till a paste has been formed.
5) Remove the bacon from the oven, flip the slices over and bake for another 5 minutes.
6) To evenly glaze the bacon slices with the prepared sweet mixture, coat the slices thoroughly on both sides, place in the oven, bake for 5 minutes and check for doneness. Repeat the process till the slices are all properly cooked. It usually takes about 35 minutes for the bacon to cook properly.

SERVING
7) The candied bacon strips can be served right away, while still hot, at room temperature or even cold. These make an excellent breakfast dish. Can also be served as an appetizer.
