Directions

MAKING
1) Using a mandolin, slice the potatoes thinly
2) Finely chop the onion, scallion, parsley and keep aside
3) Chop the bacon and keep aside ready to be used
4) Rub the chuck roast with salt, pepper and olive oil
5) In a pan, melt the butter and layer in the potatoes onto the base
6) Season with salt and black pepper
7) Top with a third of the chopped onions, chives, parsley and the chopped bacon
8) Then place the 2nd layer of potatoes over
9) Season with salt and pepper and repeat till all the potato slices are used
10) Last layer in the cheese and the pour over the cream and milk
11) Randomly cut in some butter and spread around the pan
12) Cover the pan with aluminum foil for an hour and cook over indirect heat
13) Turn the pan and cook for an additional one hour till the potatoes are done

SERVING
14) Serve the potatoes hot
