Ingredients

 
8 cups washed baby potatoes
 
125 ml natural yogurt
 
125 ml mayonnaise
 
30 ml lemon juice or 1 tablespoon cider vinegar
 
1 tbsp. chopped parsley and 2 hard-boiled egg chopped
 
500 ml leftover cooked turkey or salami, shredded (optional)
 
sun-dried tomatoes (optional)

Directions

I. Boil potatoes until tender. Set aside to cool, then cut them into halves.
II. Combine mayonnaise, yogurt, lemon juice or apple cider.
III. Season with salt and freshly ground pepper to taste, set aside.
IV. In a large bowl, combine potatoes, sun-dried tomatoes, olives, parsley, celery, chopped hard boiled egg and turkey pieces.
V. Pour dressing over the mixture and toss lightly.
VI. Refrigerate until ready to serve.
