Baby Corn Curry Recipe
Very easy and quick to make curry that goes well with Roti/Chapathi.

Ingredients
| Baby Corn - 1 can/1 bunch/2cups | ||
| Tomato | 1 , chopped | |
| Onion - Half onion - chopped | ||
| Green chillies | 3 | |
| Cinnamon sticks | 2 Medium | |
| Cloves | 3 | |
| Turmeric powder | 2 Pinch | |
| Coriander powder/Dhaniya | 0.25 Teaspoon | |
| Salt and Chilly powder - to taste | ||
| Cilantro/Coriander - to garnish | ||
Directions
Cut Baby Corn into 1 inch long pieces. Wask and Keep aside.
Heat a skillet. Add 3 tbs oil. Add chopped onions and saute well until they begin to change color.
Add cloves, cinnamon sticks, green chillies and a pinch of turmeric powder.
Add chopped tomatoes.Cover and cook on medium until tomatoes turn tender and can be mashed (approx 3 mins)
Remove lid. Add Baby corn. Adjust salt and chilly powder. Add coriander powder. Mix well. Cover and continue cooking for another 3-4 minutes.
Remove lid and cook for an additional minute.
Garnish with Cilantro
You may squeeze juice of lime before serving.
Serve Hot with Roti/Chapathi.

can use garam masala... instead of cinnamon and cloves !

Hey..it was really good.:-)..my first baby corn curry..there was a sweetness to the dish..guess that's cos of the corn..also i added a little more than a dash of lemon juice..but in spite of that it was great and well enjoyed...served it with pulao and brinjal pickle:-)

snigdha...u should open an Indian restaurant at Colorado.. it will be jam packed all the time. I had never figured a way to use baby corns in a good curry ..then again, i'm a novice at cooking. i always had used them in stir fries, and i'll try this soon! thanks :)

Yummy!!..i am known for picking out the baby corn from a pizza before serving it out..selfish?..i know ..but i cant help it..i love the texture of these cute things!!! your recipe looks fantabulous..especially the addition of lime at the end..cant wait to try it out..i just hope i get babycorns
