Baby Burgers On Mini-Biscuits Recipe

Combine 1/2 lb. ground round steak with 1/2 cup chopped onion, 1/2 cup fresh bread crumbs, 1/4 cup milk, 1 egg, 2 tablespoons chopped parsley, 1 teaspoon salt, 1/2 teaspoon Worcestershire sauce and 1/8 teaspoon pepper.
Shape into 36 (1-inch) balls, nesting 1/4 teaspoon of the creamy blue cheese in the center of each, and enclosing completely, then flatten into 36 patties.
In a large skillet, brown patties well on each side in 2 tablespoons butter or margarine.
To make mini-biscuits:
Prepare 2 cups buttermilk biscuit mix according to label directions, using 1/2 cup cold water.
Roll out 1/2 inch thick and cut with a 1 1/2-inch biscuit cutter.
Bake as directed.
Makes 36 mini-biscuits.
Split biscuits open and place burger in middle.
Serve hot with any desired relish or mustard.
