Baby Veg Baskets Recipe
Ingredients
| 3 oz/75 g butter or margarine | ||
| 32 x 7 in/18 cm squares filo pastry | ||
| 12 oz/350 g mixed baby vegetables, such as corn, carrots, turnips and broccoli, washed and trimmed | ||
Directions
Preheat the oven to Gas 7, 425°F, 220°C.
Melt fat, brush over each pastry square.
Sandwich in pairs.
Line eight deep muffin tins with half sandwiched filo, brush with fat and press remaining filo on top at an angle so that layers form a star shape, giving a fluted basket effect.
Brush with fat, bake for 5-6 mins.
Meanwhile, dice corn and carrots, leave turnips whole, and break broccoli into florets.
Steam veg for 5-6 mins, or until cooked to taste Place in baskets and brush with any remaining fat.
