Directions
In mixing bowl, dissolve yeast in warm water.
Add honey, salt, olive oil, and 1 1/4 cup flour.
Mix thoroughly.
Add remaining flour, enough to form soft dough.
Knead on floured board 5 minutes.
Cover and let rise in warm place for 45 minutes.
Preheat oven to 375° F., and prepare filling while dough rises.
Punch down dough and roll out to a thickness of 3/16 inch on a floured board.
Cut into 18 circles about 2 3/4 inches in diameter.
Turn up a tiny edge of dough around perimeter of each circle.
Place on lightly oiled baking sheet.
To prepare filling Heat first tablespoon of olive oil in heavy skillet.
Saute onion, green pepper, and garlic until tender but not brown.
Set aside.
In small saucepan, stir together tomato paste, water, second tablespoon of olive oil, salt, and other seasonings.
Add cooked beef and sauteed vegetables, and simmer gently for 5 to 10 minutes, stirring occasionally.
Mixture will be quite thick.
Allow to cool to lukewarm.
Spoon filling onto the dough circles, dividing evenly; top with grated mozzarella.
Add a slice of green or black olive or an anchovy in the center, if desired.
Bake in preheated oven for 15 minutes or until cheese is bubbly and slightly browned.
