Ingredients

 
1 package frozen baby lima beans
 
2 tablespoons olive oil
 
2 medium celery stalks with leaves, finely chopped
 
1 small red onion, finely chopped
 
1 large garlic clove, minced
 
1 tablespoon white wine vinegar
 
2 teaspoons minced fresh parsley
 
1/4 teaspoon salt
 
1/8 teaspoon coarsely ground black pepper

Directions

In 10 inch skillet, prepare frozen baby lima beans as label directs.
Drain lima beans well and set aside.
Wipe skillet dry.
In same skillet, heat olive oil over medium heat.
Add celery with leaves, onion, and garlic and cook 10 minutes or until vegetables are tender, stirring occasionally.
Add cooked lima beans, vinegar, parsley, salt, and pepper; heat through.
