 Water3 Tablespoon
 Sherry vinegar1 1/2 Tablespoon
 Walnut oil1 Teaspoon
 Dry mustard3/4 Teaspoon
 5 cups mixed baby salad greens
 Minced parsley2 Tablespoon
 Shallots1 Teaspoon, minced
 Walnuts2 Tablespoon, finely chopped
 2 ounces goat cheese, cut into 4 slices
 Vegetable cooking spray

Directions

Combine first 4 ingredients in a small bowl; stir with a wire whisk until blended.
Set aside.
Combine greens, parsley, and shallots in a medium bowl; add vinegar mixture, and toss well.
Set aside.
Lightly press chopped walnuts into both sides of each cheese slice.
Place cheese slices on a baking sheet coated with cooking spray.
Bake at 425° for 3 minutes.
Arrange greens evenly on individual salad plates.
Place 1 cheese slice on each salad plate.
