Baby Greens With Warm Goat Cheese Recipe
Ingredients
| Water | 3 Tablespoon | |
| Sherry vinegar | 1 1/2 Tablespoon | |
| Walnut oil | 1 Teaspoon | |
| Dry mustard | 3/4 Teaspoon | |
| 5 cups mixed baby salad greens | ||
| Minced parsley | 2 Tablespoon | |
| Shallots | 1 Teaspoon, minced | |
| Walnuts | 2 Tablespoon, finely chopped | |
| 2 ounces goat cheese, cut into 4 slices | ||
| Vegetable cooking spray | ||
Directions
Combine first 4 ingredients in a small bowl; stir with a wire whisk until blended.
Set aside.
Combine greens, parsley, and shallots in a medium bowl; add vinegar mixture, and toss well.
Set aside.
Lightly press chopped walnuts into both sides of each cheese slice.
Place cheese slices on a baking sheet coated with cooking spray.
Bake at 425° for 3 minutes.
Arrange greens evenly on individual salad plates.
Place 1 cheese slice on each salad plate.
