Baby Eggplant Recipe

Ingredients

 
8 baby eggplants (size of your fist)
 
3/4 cup good olive oil
 
Salt and fresh pepper to taste
 
1-2 tablespoons chopped mint
 
2 cloves garlic, chopped
 
Few sprigs of fresh thyme

Directions

Trim the eggplants.
Make 4-5 slits, on an angle, top to bottom, and fan them out flat.
Film the bottom of a baking dish with 1/4 cup of the olive oil.
Lay the eggplant in the dish.
Sprinkle over 1/4 cup of the oil.
Salt and pepper the eggplant.
Sprinkle over the garlic, mint, and thyme.
Place in 350° F oven 15 minutes.
Remove eggplant and sprinkle over the rest of the oil.
Return to oven and bake until barely tender.
