12 small young carrots

1/2 cup water or chicken stock
1/2 teaspoon sugar
Chopped parsley
1/2 tablespoon butter
Directions
Top and tail the carrots and put into a saucepan with all the ingredients except the parsley.
Press a piece of wax paper or aluminum foil well down on the vegetables and put the lid on the saucepan.
Boil rapidly for 10 minutes.
Remove the paper or foil.
Shake the saucepan over the heat until the carrots are nicely glazed.
Pepper them well and serve with chopped parsley on top.
