Directions

GETTING READY
1.Heat the grill and soak some wood chips in water for at least 20 minutes.
2.Preheat the oven at 250 degrees Farenheit.

MAKING
3.Take the meat and season it with the Pappy's seasoning and the creole seasoning to form the dry rub.
4.Place the wet chips on the grill and cover it to create the smoke. The meat will be cooked in indirect heat.
5.Put the meat in the grill to smoke it.
6.Check the meat after 45 minutes and flip them over. Do not open the grill in between.
7.Let it remain for another 45 minutes, a total of 90 minutes.
6.Take the chicken out and place on a wired rack which is placed in a baking dish. Pour some water in the baking dish. Cover with foil and place in the oven.
7.Take the ribs and smother with a barbecue sauce and place on a wired rack in a baking dish. Cover with foil. Pour a little water in the bottom of the baking dish.
8.Bake for 180 minutes.

SERVING
9. Serve right out of the oven with barbecue sauce on top of the ribs.
