Baba Ghanoush Recipe
Ingredients
1 medium-sized eggplant
2 tablespoons tahini (ground sesame-seed paste)
1 large clove garlic, crushed
Juice of 1/2 lemon (about 2 tablespoons)
Salt to taste
Directions
Place eggplant directly on stove burner and roast over very low flame, turning often, or place in 375° oven, until skin has a charred look and eggplant collapses; remove from heat and cool.
Scoop out eggplant pulp and transfer to a small bowl.
Mash until smooth and combine with remaining ingredients.
