Ingredients

 
12 ounces back in crabmeat
 
Lettuce
 
1 tablespoon lemon juice
 
Tomato wedges
 
Remoulade sauce
 
Lemon wedges
 
2 large avocados
 
Black olives

Directions

Pick over the crabmeat.
Discard any bits of shell or cartilage.
Toss the crabmeat gently with the lemon juice.
Gently fold in the Remoulade Sauce.
Peel the avocados, halve them, and remove the seeds.
Arrange lettuce leaves on each of 4 plates.
Place an avocado half on each plate.
Fill the center with the crabmeat mixture.
Garnish with tomato and lemon wedges and black olives.
