Tarragon vinegar - 1/4 cup
 
Salad oil - 1/2 cup
 
Horseradish mustard - 2 tbsp
 
Catsup - 1 tbsp
 
Paprika - 1 1/2 tsp
 
Salt - 1/2 tsp
 
Cayenne pepper - 1 1/4 tsp
 
Celery - 1/4 cup, minced
 
Green onions and tops - 1/4 cup, minced
 
Cooked shrimp - 2 lb
 
Medium Avocados - 4

Directions

MAKING
1. In a large bowl, mix the vinegar, mustard, catsup, paprika, salt and cayenne pepper and blend well. Slowly pour in the oil while beating constantly.
2. Add the celery and onions and pour this mixture over shrimp. Set aside to refrigerate, for 4 to 5 hours.
3. Cut avocados in half and peel. Arrange 6 shrimp on each avocado half.

SERVING
4. Serve with sauce on the side
