Avocado Soup Recipe
Ingredients
1/4 cup butter
1/2 cup light cream
4 tablespoons flour
2 quarts meat stock
2 teaspoons onion juice or grated onion
5 large avocados pitted and peeled
2 canned tortillas, cut in pieces, (optional)
Directions
Melt butter in deep kettle; blend in flour; add stock gradually.
Add onion juice.
Bring to a boil, stirring occasionally.
Mash avocados; stir in cream.
Place in tureen; pour in soup gradually, stirring constantly, top with tortillas
