Avocado-Shrimp Salad Recipe
The avocado shrimp salad is prepared with canned shrimps and ripe avocados. Combined with cucumber chunks, flavored with lemon juice and dressed with yogurt salad dressing, the avocado and shrimp salad is best served with parsley.
Ingredients
2 ripe avocados, peeled and diced
2 teaspoons lemon juice
2 4-ounce cans medium shrimp, rinsed and drained
1/2 cup cucumber chunks Parsley or watercress for garnish
Directions
Sprinkle avocado with lemon juice.
Combine shrimp (reserve 8 shrimp for garnish), avocado and cucumber in bowl; chill.
Toss with chilled Yogurt Dressing.
Mound on lettuce; top with shrimp and a sprig of parsley or watercress.
