Avocado Shrimp Omelette Recipe

Ingredients
4 eggs
Pinch salt Pinch
2 tsp butter 10 mL
1/4 lb small fresh or frozen shrimp cooked and chopped, or 1 can 125 g
1 small avocado, peeled, pitted and chopped
1/4 cup shredded Cheddar cheese
Freshly ground pepper 50 mL
Directions
In small bowl, lightly beat together 2 of the eggs and salt with fork, taking care not to overheat.
In 6 inch (15 cm) omelet pan or skillet, melt 1 tsp (5 mL) of the butter over medium high heat.
After foam subsides, pour in beaten eggs; stir centre gently with flat of fork.
When eggs begin to set, sprinkle half the shrimp, half the avocado and half the cheese across centre of omelet.
Season with pepper to taste.
Fold omelet in half and let stand over heat for about 30 seconds.
Hold warm plate close to pan and tip omelet out onto plate.
Keep warm in 180°F (80°C) oven while making second omelet.
