Avocado Crab Cutlets Recipe
Ingredients
Crab meat- 2 cups, cooked
Butter- 3 tablespoons
Flour- 4 tablespoons
Salt- 1/2 teaspoon
Pepper- 1/8 teaspoon
Milk- 1 1/2 cups
Avocado- 2 cups diced
Fine bread crumbs
Eggs- 3, beaten
Directions
GETTING READY
1.Start by removing the spines form the crab meat
MAKING
2.In a pan, melt butter and blend in flour
3.Now add salt, pepper and milk and cook until the mixture is thick, make sure to kee p stirring constantly
4.Also add avocado and crab meat and mix properly
5.Take the mixture and shape into cutlets
6.Roll the cutlets in crumbs, then in egg and again in crumbs
7.In a pan, fry the cutlets in hot deep fat until browned for 2-4 minutes
SERVING
8.Serve with a sauce of your choice
TIPS
Alternate method is to add 1/2 cup cream, place cutlet in casserole and cover with buttered crumbs and brown in moderate oven (350° F.)
