Avocado And Corn Recipe

In my personal opinion, this Avocado And Corn stands Numero Uno in the world and I cannot contain my urge to offer this to you. The main ingredient in this recipe is Vegetable. Best enjoyed as a Side Dish this recipe was taught to me by a dear friend who also happens to be a great chef. I am certain both of us will concur that this Avocado And Corn is simply scrumptious.

Ingredients

 
1 avocado
 
1 teaspoon sugar
 
1 teaspoon mayonnaise
 
1 x 7 oz can whole kernel corn, drained
 
1 dessert pear, peeled, cored and grated
 
1/4 cup finely chopped ham
 
Salt and pepper

Directions

Cut the avocado in half lengthwise, remove the stone (seed) and scoop out the flesh.
Place in a bowl with the sugar and mayonnaise and mash together with a fork.
Stir in half the sweetcorn, the pear and ham.
Add salt and pepper to taste.
Pile the mixture back into the avocado halves.
Place on two serving dishes and arrange the remaining corn around the edge.
Serve with thinly sliced brown bread and butter.
