Avocado And Chicken Salad Recipe
Avocado and chicken salad is made with juicy avcado and cooked chicken for a very nutritious and easy meal. Tossed with mayonnaise along with orange bits and pimiento, this chicken recipe is made spciy with a hint of paprika.
Ingredients
3 ripe avocado pears
2 tablespoons orange juice
1 cup diced cooked chicken
1 2 stalks celery, diced
3 oranges
1/4 cup mayonnaise
A pinch of paprika pepper
1 tablespoon chopped pimento salad greens
Directions
Peel avocados, remove the stones and scoop out some of the flesh.
Brush the avocados with orange juice.
Cut the scooped out avocado flesh into small pieces and place in a bowl with the chicken and celery.
Peel and section 2 of the oranges, removing seeds and white pith.
Cut into small pieces and add to the chicken and celery mixture.
Combine the mayonnaise with the paprika, add salt to taste and blend with the chicken.
Fill the avocado halves and sprinkle with chopped pimento.
Serve on a bed of salad greens and garnish with sections of the remaining orange.
