 Avocados2
 Zest and 3 tablespoons juice from 1 lemon
 125 g / 4 1/2 oz peeled cooked prawns
 5 tablespoons low-fat mayonnaise
 Coriander seeds1 Teaspoon, crushed
 Red chillies1 Teaspoon, crushed
 Coriander leaves2 Tablespoon, chopped
 Green chilli1 , chopped
 Red chilli1 , chopped
 Sesame seeds1 Tablespoon (For the garnish:)
 Coriander sprig4 (For the garnish:)

Directions

1. Halve the avocados and remove the stones. Brush the exposed flesh with a little of the lemon juice to prevent discoloration. Place the avocados cut side down on serving plates.
2. Squeeze out any excess water from the prawns.
3. Mix together the mayonnaise, lemon zest and juice, coriander seeds, dried chillies, fresh coriander, and fresh green and red chillies. Add the prawns and blend everything together.
4. Turn the avocado halves over and spoon equal amounts of the mixture into them.
