Avocado Vegetable Toss Recipe
Ingredients
2 12-ounce cans whole kernel corn, drained and chilled
2 medium avocados, peeled and diced
6 hard-cooked eggs, diced and chilled
2 tablespoons chopped onion
1 cup mayonnaise or salad dressing
1 tablespoon lemon juice
1/2 teaspoon chili powder
1/4 teaspoon ground cumin
1/8 teaspoon ground nutmeg
Directions
Combine corn, avocados, eggs, and onion.
Blend together remaining ingredients.
Toss mayonnaise mixture lightly with avocado mixture.
Garnish with sliced pitted ripe olives, if desired.
