Avocado Tempura Recipe

Ingredients
3 green onions
3 large ripe avocados
1/4 cup fresh lemon juice
3 or more dashes Tabasco sauce, to taste
1 teaspoon salt
3/4 teaspoon ground coriander
1/2 pound (about 2 cups) salted cashews, chopped
1/3 pound Monterey Jack cheese, shredded
1/2 cup all-purpose flour
1 1/2 cups fine dry white bread crumbs
Sufficient peanut oil for deep frying
Directions
Mince both green and white portions of green onions and drop into a glass, ceramic, or stainless-steel bowl.
Peel and seed avocados and add to green onions.
Immediately add the lemon juice, Tabasco, salt, and coriander.
Mash with a fork until mixture is well combined.
Stir in the chopped nuts and shredded cheese.
Roll small balls (about 1 tablespoon each) of avocado mixture lightly in flour, then coat well with bread crumbs.
Pour several inches of oil into a heavy pan and bring to a temperature of 350 degrees on a deep-fry thermometer.
Fry the avocado balls until crisp and deep golden brown, about 2 minutes.
