Avocado Soup With Golden Caviar Recipe
Ingredients
4 tablespoons butter
3/4 cup chopped green onions
2 ripe avocados, peeled, seeded, and chopped
3-4 cups chicken stock
Juice of 1 lemon or lime
Salt and fresh pepper to taste
1 cup heavy cream, barely whipped
Golden caviar (a few grains for each serving).
Directions
Melt the butter in a saucepan.
Saute the green onions 3 to 4 minutes.
Add the avocados and stir around.
Add the stock and lemon or lime juice; bring to a boil.
Cook 5 minutes.
Puree in blender, food processor, or food mill.
Season with salt and pepper.
Fold in the whipped cream.
Reheat slowly.
Garnish with the caviar.
