Ripe avocados - 3
Chicken stock - 4 1/2 cups
Light cream - 1 cup
Dry sherry - 1/4 cup
Salt
White peppercorns

Directions
GETTING READY
1 In a pan, bring the stock to a gentle boil over moderate heat.
2 Meanwhile, cut the avocados lengthwise in half.
3 Discard the pit, and peel.
4 Reserving one of the peeled avocado halves, cut the rest into pieces.
MAKING
5 In a blender jar, put the chopped avocado with 1/2 cup of the hot stock.
6 Blend at high speed to puree.
7 Add the cream and blend at high speed for another 30 seconds.
8 When the stock reaches a gentle boil, reduce the heat.
9 Gradually beat in the avocado cream mixture, adding a little at a time with a whisk or hand held electric beater.
10 Do not allow to boil.
11 Remove from the heat when all the avocado mixture has been added.
12 Stir in the sherry, salt, and freshly ground white pepper to taste.
SERVING
13 Ladle into very hot soup bowls.

15 Garnish each bowl of soup with 2-3 slices.
