Avocado Gazpacho Recipe
Ingredients
1 cup sour cream
1/2 cup milk
1 cup each tomato juice and tomato sauce
2 tablespoons fresh lemon juice
1 tablespoon olive oil
1 garlic clove, finely minced
1 bay leaf
1 cucumber, peeled, seeded and minced
1 tomato, peeled, seeded and diced
Salt, black pepper and Tabasco sauce to taste
2 avocados, mashed with
1 tablespoon fresh lemon juice
Finely minced cucumber, peeled tomato and bell pepper
Garlic fingers
Directions
Beat sour cream well, then beat in milk, tomato juice, tomato sauce, lemon juice, oil and garlic.
Combine well, add bay leaf, minced cucumber and diced tomato.
Season with salt, pepper and Tabasco and chill thoroughly to blend flavors.
Remove bay leaf.
Blend avocados into tomato mixture just before serving.
Adjust seasonings and serve in chilled bowls.
