Avocado Fool Recipe
Ingredients
| Avocados | 3 Large | |
| Juice of 2 limes or lemons | ||
| Icing Sugar | 2 Tablespoon | |
| Whipping cream | 1/2 Cup (16 tbs) | |
| Pistachio nuts | 1/2 Cup (16 tbs), blanched | |
| 1 kiwi fruit, peeled and sliced into 6 pieces | ||
Directions
Peel avocados.
Remove pits and dice flesh.
In a blender, combine lime juice and icing sugar.
Blend for 30 seconds.
Add avocado and blend until smooth.
Pour into a large bowl.
Beat the cream until soft peaks form.
Fold cream gently into the avocado mixture.
Divide the avocado mixture among 6 champagne glasses.
