Avocado Cream Recipe
Ingredients
2 ripe avocado pears
1 tablespoon white wine vinegar
4 anchovy fillets, finely chopped
2 teaspoons finely chopped onion
Cayenne pepper
1 teaspoon sugar
1/2 cup whipping cream
Paprika
Directions
1. Cut the pears in half and remove the seed.
2. Scoop out all the flesh, being careful not to break the skin. Reserve the empty shells. Put the flesh into a bowl and mash well. Add vinegar, anchovy, and onion and season with salt, Cayenne pepper, and sugar.
3. Chill. Just before serving fold in the whipped cream. Fill the pear shells and sprinkle with paprika.
