Avocado Boats Recipe
Ingredients
| 1 medium-sized avocado | ||
| Lemon juice | ||
| Lettuce leaves | ||
| 1/2 cup Tabbouli | ||
| Scallions | 2 Small | |
| Paprika | ||
| Alfalfa sprouts | 1/2 Cup (16 tbs) | |
| Black olives | ||
Directions
Slice avocado in half lengthwise and remove pit. Peel, if desired. Sprinkle with lemon juice. Place each half on a bed of lettuce on individual serving plates.
Fill center with Tabbouli. Partially insert white end of scallion into narrow end of avocado to form a "mast." Sprinkle filling with paprika. Surround avocado with sprouts and olives.
