Avocado Aspic Ring Recipe
Avocado Aspic Ring is a delicious side dish which I always crave for. Try this Avocado Aspic Ring; I bet, you will surely get a lot of compliments for this.
Ingredients
| 2 envelopes unflavored gelatin | ||
| Cold water | 1/2 Cup (16 tbs) | |
| 3 cups seasoned chicken broth or consomme | ||
| Avocados | 2 , halved | |
| Lemon juice | ||
| Onion | 2 Teaspoon, grated | |
| 1 cup diced celery, cucumber, cooked chicken or shrimp | ||
Directions
1. Soften the gelatin in cold water. Heat, stirring, until dissolved. Add the broth and cool to room temperature.
2. Remove the seeds from the avocados, peel and cut into thin rings. Gut these in half to form crescents. Sprinkle with lemon juice.
3. Cover the bottom of a ring mold with gelatin and chill until set. Arrange the crescents on top and cover with a layer of soft gelatin. Chill. Arrange more crescents around the sides and add a thin layer of gelatin to hold them in place.
4. Mix the remaining gelatin with the onion, celery and remaining avocado, chopped. Turn into the garnished mold and chill until firm. Unmold.
