Avocado and Tomato Towers Recipe
Ingredients
| Tomatoes | 6 Large | |
| black pepper | 1 | |
| Red chilli | 1 Small, finely chopped | |
| Avocados | 3 | |
| Lemon | 1 | |
| Onions spring | 6 | |
| Basil | 1 Cup (16 tbs) | |
| Balsamic vinegar | 1 Tablespoon | |
| Extra virgin olive oil | 4 Tablespoon |
Directions
Deseed the tomatoes, chop them and season with pepper.
Put in a bowl, add the chopped chilli and set aside.
Chop the avocados into small cubes and squeeze the lemon all over them.
Chop the spring onions and the basil finely and add to the avocados.
Mix in well.
Place a pastry ring on a serving plate and half fill it with a quarter of the avocado mix.
Then top with a quarter of the tomato mix.
Lift off the ring and repeat with the remaining mixtures.
Drizzle 1/4 tablespoon of the balsamic vinegar, followed by 1 tablespoon of the olive oil, all around each of the 4 plates before serving.
