Avocado And Tomato Dip Recipe
Ingredients
| avocados-2 ripe weighing (1 lb / 450 g approx.) | ||
| 2 tomatoes, peeled, seeded and chopped | ||
| Tomato puree | 1 Tablespoon | |
| Juice and grated rind of 1 lemon | ||
| Garlic | 1 Clove (5gm) | |
| Onion | 1 Small, chopped | |
| Chopped | 2 Ounce | |
| Cheese curd | 1/2 Pound | |
| Sea salt | 1 Teaspoon | |
| Good pinch paprika | ||
| black pepper | 1 | |
Directions
GETTING READY
1. Peel the avocados.
2. Scoop the flesh and then sieve it to get a smooth paste
3. Set aside till required
MAKING
4. In a blender bowl, tip in the tomatoes, garlic, onion, spinach, the tomato puree, lemon juice, and rind. Blend till a smooth paste.
5. In a large bowl, tip in the remaining ingredient and season to taste
6. Transfer this to a large bowl
7. Cover with greaseproof paper and then chill for one hour or till cold
FINALIZING
8. Garnish with sour cream just before serving
SERVING
9. Serve with crudités or sticks of carrot, celery, pepper etc or crackers
TIP
This pate can also be used as a stuffing for small tomatoes.
