Avocado and Shrimp Salad Recipe
Ingredients
| Shrimp | 1 Cup (16 tbs), cooked | |
| Eggs- 2 hard boiled, chopped | ||
| Celery | 1/2 Cup (16 tbs), finely chopped | |
| Green onions | 1/4 Cup (16 tbs), finely chopped | |
| Parsley | 1/4 Cup (16 tbs), chopped | |
| Cucumber | 1/2 Cup (16 tbs), chopped | |
| Bell pepper | 2 Tablespoon, finely chopped | |
| Mayonnaise | 4 Tablespoon | |
| Hot sweet mustard | 2 Teaspoon | |
| Pepper | 1 To taste | |
| Salt | 1 To taste | |
| Lemon- to taste | ||
| Avocados | 1 | |
Directions
GETTING READY
1) In a bowl, place together shrimps, eggs celery, green onions, parsley,
cucumber, peppers mayonnaise, mustard lemon juice and season to taste.
2) Lightly fold the shrimps mixture to combine properly.
3) Peel the avocados and cut into half lengthwise.
4) Stone the avocados and stuff the shrimp mixture equally among 4 halves.
SERVING
5) Serve cold over the bed of mixed salad.
