 Eggs- 2 hard boiled, chopped
 Celery1/2 Cup (16 tbs), finely chopped
 Green onions1/4 Cup (16 tbs), finely chopped
 Parsley1/4 Cup (16 tbs), chopped
 Cucumber1/2 Cup (16 tbs), chopped
 Bell pepper2 Tablespoon, finely chopped
 Mayonnaise4 Tablespoon
 Hot sweet mustard2 Teaspoon
 Pepper1 To taste
 Salt1 To taste
 Lemon- to taste
 Avocados1

Directions

GETTING READY
1) In a bowl, place together shrimps, eggs celery, green onions, parsley,
cucumber, peppers mayonnaise, mustard lemon juice and season to taste.

2) Lightly fold the shrimps mixture to combine properly.
3) Peel the avocados and cut into half lengthwise.
4) Stone the avocados and stuff the shrimp mixture equally among 4 halves.

SERVING
5) Serve cold over the bed of mixed salad.
