Ingredients

 
Rice Pilaf
 
2 tablespoons lemon juice
 
2 tablespoons olive oil
 
8-10 stuffed green olives, sliced
 
2 tablespoons chopped chervil
 
3 ripe avocados
 
Lettuce cups or red curly lettuce if in season

Directions

Toss rice with 1 tablespoon lemon juice, olive oil, olives, and chervil.
Chill in refrigerator while cutting avocados in half lengthwise.
Remove pits.
Peel fruit and sprinkle with 1 tablespoon of lemon juice to keep from discoloring.
Hollow out a larger hole in center of each avocado half.
Fill center with a large mound of the cold rice and serve on your selection of lettuce.
