Avocado And Ham Crepes Recipe
Ingredients
| 18 crepes | ||
| Avocados | 3 Medium | |
| Salt | 1 Teaspoon | |
| Black pepper | 1/4 Teaspoon | |
| Butter | 2/3 Cup (16 tbs), melted | |
| Ham | 4 Cup (16 tbs), chopped | |
| Dry sherry | 3/4 Cup (16 tbs) | |
| Cream | 2 Cup (16 tbs) | |
| 1 tablespoon prepared French mustard | ||
Directions
Make the crepes using the Basic Crepe Batter recipe.
Set aside and keep warm.
Remove the flesh from the avocados.
Chop and puree in an electric blender with the salt, pepper and half the melted butter.
Set aside.
Mix together the ham, sherry, cream and mustard in a saucepan.
Bring to a boil.
Remove from heat.
Spread each crepe with the avocado mixture, then top with the ham mixture.
Fold over and place in a buttered shallow baking dish.
Pour on the remaining melted butter and bake in a 350°F (180°C) oven for about 1/2 hour.
