The Aviyal is a signature vegetarian dish from Kerala. It is often made on auspicious days and during festival like Onam in Kerala. It is a thick mixture of vegetables, curd and coconut, seasoned with coconut and curry leaves. Avial is considered an essential part of the Sadhya, the Malayali vegetarian feast.

Aviyal made from a healthy dose of vegetables and coconut is a must have on Onam menu.

Ingredients

 Plantain150 Gram, unripe, chopped
 Yam75 Gram, chopped
 Potato3 , cubed in 1 inch pieces
 Snake gourd100 Gram, chopped
 Drumstick3 , chopped into 2 inch pieces
 Carrots2 , chopped
 Coconut oil1 Teaspoon (As Needed)
 Cumin seeds30 Gram
 Grated coconut150 Gram
 Onions2 , sliced
 Green chillies5
 Turmeric powder1 Teaspoon
 Tamarind extract4 Drop

Directions

MAKING
1) In a blender, coarsely grind coconut, jeera, onions, green chillies and turmeric without any water. Do not make it soggy.
2) Take a saucepan and add all the vegetables. Put a little oil and mix. Then sprinkle turmeric and pour in the water. Cook for about 10 minutes
3) When the vegetables are cooked, add a few drops of tamarind extract. This is however optional. Simmer for 2 minutes.
4) Put in some curry leaves and some coconut oil. Stir well and remove from heat.

SERVING
5) Serve hot with Onam sadhya.

Rich, creamy vegetable stew with aromatics, coconut and curd. The garnish of curry leaves in coconut oil gives it that distinctive and addictive taste. A must-have on the Onam festive menu.
