Onam Avial Recipe Video
The Aviyal is a signature vegetarian dish from Kerala. It is often made on auspicious days and during festival like Onam in Kerala. It is a thick mixture of vegetables, curd and coconut, seasoned with coconut and curry leaves. Avial is considered an essential part of the Sadhya, the Malayali vegetarian feast.
Ingredients
Unripe plantain – 150 grams, chopped
Yam – 75 grams, chopped
Potatao - 3, cubed into 1 inch pieces
Snake Gourd – 100 grams, chopped
Drumstick – 3, chopped into 2 inch pieces
Carrots – 2, chopped
Coconut Oil – as needed
Cumin seeds – 30 grams
Coconut – 150 grams, grated
Onions – 2 nos, sliced
Green chillies – 5
Turmeric powder – 1 teaspoon
Tamarind extract - few drops
Directions
MAKING
1) In a blender, coarsely grind coconut, jeera, onions, green chillies and turmeric without any water. Do not make it soggy.
2) Take a saucepan and add all the vegetables. Put a little oil and mix. Then sprinkle turmeric and pour in the water. Cook for about 10 minutes
3) When the vegetables are cooked, add a few drops of tamarind extract. This is however optional. Simmer for 2 minutes.
4) Put in some curry leaves and some coconut oil. Stir well and remove from heat.
SERVING
5) Serve hot with Onam sadhya.

Can I make this without coconut. I don't like coconut and its very high on calories.
