Avgolemono Soup Recipe
My passion for Avgolemono Soup grew during high school days. This Avgolemono Soup when served as a Side Dish will bring happiness in your dining room. Will you be able to suggest a recipe on par with this Avgolemono Soup recipe? I doubt.
Ingredients
8 cups (2 L) chicken broth
1/2 cup (125 mL) short grain rice
4 eggs, beaten
Juice of 2 lemons
1/4 cup (60 mL) parsley, minced
Directions
Place in a large microwave-safe bowl the chicken broth and rice.
Microwave at HIGH 10 minutes, stirring once.
Then microwave 10 minutes at MEDIUM-HIGH.
Stir well.
Beat together the eggs and lemon juice.
Gradually add to the egg mixture 2 cups (500 mL) of the hot soup, beating constantly.
Or, if you have a mixer or food processor, place the eggs and lemon juice in the machine, beat at high speed for 1 minute, then gradually add 1 cup (250 mL) of the hot broth.
Beat and add the remaining hot soup, beating constantly.
Microwave 3 minutes at MEDIUM.
Add the parsley and serve.
