Chicken Soup Avgolemono Recipe
Avgolemono is a Greek soup, which has a great taste. Avgolemono gets its taste from chicken broth mixed with eggs and flavored with lemon juice. Avgolemono is cherished by many all over the world.
Ingredients
4 cups rich chicken broth (canned, freshly made, or made with 4 cups water and 3 tablespoons chicken stock base)
4 eggs
4 tablespoons lemon juice
1 whole lemon, thinly sliced
Directions
Heat chicken broth to boiling.
Beat eggs until light and foamy and beat in the lemon juice.
Gradually stir in part of the hot broth, beating constantly.
Return to the pan with broth and place over very low heat, stirring, until soup is thickened.
Pour into small cups or bowls and garnish each with a lemon slice.
