Ingredients

 
1 cup White navy beans
 
1 large potato (Diced)
 
1 cup fresh/frozen grated coconut
 
8 dry red chillies (Fry in 1/4 tsp oil)
 
1/4 tsp tamarind paste
 
Salt to taste
 
2 tbsp oil
 
1/2 tsp mustard seeds
 
1 spring curry leaves
 
1 tsp coriander seeds

Directions

Wash and soak white beans overnight. Pressure cook along with diced potatoes.
Heat 1 tbsp oil in a pan and fry coriander seeds till light brown.
Put coconut, red chillies, salt and tamarind paste along with some warm water to a blender and grind them to a coarse paste. Add fried coriander seeds and grind to a smooth paste.
Add the ground masala to the cooked white beans and bring it to a boil. Cover the pan and lower the heat and cook the beans for about 10 - 12 minutes. Switch off the flame.
Now heat remaining 1 tbsp oil in another pan and add mustard seeds. When they splutter, add curry leaves. Saute for about 10 seconds. Pour this over the white beans gravy. Mix well.
Serve hot along with white rice.

Looks great.. we don't have white beans much often but I will definitely try this out. tamarind paste lends such a great taste to gravies :)
