Ingredients

 
1 Whole Chicken, cut up and skinned
 
1 Tbsp Turmeric Powder
 
1 Tbsp Sea Salt
 
1 tsp Jaggery (or Brown Sugar)
 
2 tsp Chili Powder
 
1 tsp Coriander Seeds, ground
 
3 Cardamom Pods, ground
 
1/2" Piece of Cassia Bark (or Cinnamon), ground
 
7 Clove Heads, ground
 
1 Tbsp Fenugreek Leaves (Kasoori Methi), ground
 
1 tsp Cumin Powder (Jeera Seed Powder)
 
1/2 Of a Large Onion, split in half again
 
1" Fresh Ginger Root
 
2 Cloves Garlic
 
1 Whole Green Chili, sliced
 
1/2 Cup Tomato Puree
 
1 tsp Cayenne Pepper, ground
 
2 Cups Water
 
1 Tomato, chopped
 
1 Cup Vegetable of Choice, okra, potato, green beans, squash..
 
2 Tbsp Ghee (or Butter)

Directions

Grate 1/2 of your halfed onion (1/4), ginger and garlic into container.
Place cut up chicken in container, to chicken add the following: turmeric, salt, jaggery, fenugreek leaves, chili powder, coriander, cardamom, cumin, cloves, cassia bark, cayenne pepper, juice from grated ginger, onion and garlic, green chili, and finally the tomato puree. Mix well let stand 30-60 minutes.
Heat ghee in pan, add remaining onion and saute til tender. Add tomato and your vegetables and cook 2 minutes. Add chicken mixture to pan and stir all ingredients together. Allow chicken to cook 5 minutes and then add 2 cups water. Reduce heat and simmer 45-60 minutes. Serve over basmati rice with naan bread. Enjoy!
