Authentic Sambal Bajak Recipe
Sambal Bajak, is a very versatile condiment to almost the entire Indonesian cuisine. Quite spicy in nature, this sambal is a global craze for satay lovers.

Ingredients
| Red chillies | 5 | |
| Red bird's-eye chillies - 5 | ||
| Nutmeg | 1/4 Teaspoon, grated | |
| Shallots | 6 | |
| Salt | 1 Teaspoon | |
| Palm sugar | 1 1/2 Teaspoon, chopped | |
| Salam leaf - 2 | ||
| Lemongrass | 2 | |
| Galangal – 1 centimeter piece, peeled and sliced | ||
| Tamarind juice | 2 Tablespoon | |
| Salt | 2 Tablespoon | |
| Oil | 2 Tablespoon | |
Directions
MAKING
1. In a blender, add red chillies, bird’s eye chillies, nutmeg, shallots, salt, palm sugar and finely blend.
2. In a skillet, heat oil and sauté ground ingredients together with salam leafs, lemon grass and galangal, stirring until the mixture changes colour.
3. Add tamarind juice and simmer for another minute, then leave to cool.
SERVING
3. Remove salam leaves, lemon grass and galangal before serving.
4. Serve as condiments or store for upto 1 week.
