Australian Squares Recipe
Ingredients
| Butter | 1/2 Cup (16 tbs), softened | |
| Brown sugar | 1/2 Cup (16 tbs), divided | |
| Lemon rind - 1 tablespoon, grated | ||
| Vanilla extract | 1 Teaspoon | |
| Egg | 1 | |
| Flour | 1 Cup (16 tbs), unsifted | |
| Water | 1/4 Cup (16 tbs) | |
| Semi-sweet chocolate | 6 Ounce | |
| Brown sugar | 1/4 Cup (16 tbs) | |
| Confectioner-'s Sugar - to sprinkle | ||
Directions
MAKING
1. In a bowl, combine butter, ½ cup brown sugar, lemon rind, vanilla and cream until light and fluffy.
2. Add egg yolk, mix and add flour, water and stir in chocolate and set aside.
3. In another bowl, beat egg white until stiff, add ¼ cup brown sugar till stiff and glossy, fold into the chocolate mixture.
FINALISING
4. In a 8x8-inch baking pan, pour the mixture and bake at 250 degrees centigrade, for about 30 minutes.
5. Sprinkle confectioner-'s sugar while still warm. Cool and cut into 2-inch squares.
SERVING
6. Serve cool.
