Ingredients

 Butter1/2 Cup (16 tbs), softened
 Brown sugar1/2 Cup (16 tbs), divided
 Lemon rind - 1 tablespoon, grated
 Vanilla extract1 Teaspoon
 Egg1
 Flour1 Cup (16 tbs), unsifted
 Water1/4 Cup (16 tbs)
 Semi-sweet chocolate6 Ounce
 Brown sugar1/4 Cup (16 tbs)
 Confectioner-'s Sugar - to sprinkle

Directions

MAKING
1. In a bowl, combine butter, ½ cup brown sugar, lemon rind, vanilla and cream until light and fluffy.
2. Add egg yolk, mix and add flour, water and stir in chocolate and set aside.
3. In another bowl, beat egg white until stiff, add ¼ cup brown sugar till stiff and glossy, fold into the chocolate mixture.

FINALISING
4. In a 8x8-inch baking pan, pour the mixture and bake at 250 degrees centigrade, for about 30 minutes.
5. Sprinkle confectioner-'s sugar while still warm. Cool and cut into 2-inch squares.

SERVING
6. Serve cool.
