I love this sauce with hard-boiled eggs sliced and arranged prettily on a dish, with a sprinkling of parsley. Or you can serve it over cauliflower instead of a cheese sauce.

 Butter1 Tablespoon, cut into small pieces

Directions

Warm the Béchamel sauce in a medium saucepan.
Add the cream and mix to combine.
Simmer for 5 minutes, stirring.
Add the tomato paste or passata, stirring and tasting as you go, until the color and flavor are to your liking.
Simmer for 5 minutes.
Season to taste with salt, pepper and nutmeg.
Add the butter bit by bit, stirring to incorporate each piece.
