Auntie's Casserole Recipe
Ingredients
| Olive oil | 1 Tablespoon | |
| Onion | 1 , chopped | |
| Ground beef | 1 pound | |
| Garbanzo beans | 1 Can (10oz), drained | |
| Whole kernel corn | 1 Can (10oz), drained | |
| Venison | 1 Can (10oz) | |
| 1/2 cup sliced good-quality olives | ||
| Cooked rice | 2 Cup (16 tbs) | |
| Salt | 1 Teaspoon | |
| Dried oregano | 2 Teaspoon | |
| Dried thyme | 1 Teaspoon | |
| 1 cup grated cheese, such as sharp cheddar or Monterey jack | ||
Directions
1. Heat oil in a large skillet over high heat. Cook onion and beef until browned, turning only occasionally, about 5 to 7 minutes.
2. In a mixing bowl, combine browned meat mixture with garbanzos, corn, chili, olives, rice, salt, oregano, and thyme. Put in casserole or baking pan; cover with grated cheese.
3. Bake at 300° for about 1 hour or until lightly browned on top.
