Ingredients

 
Brinjals 2 large
 
Union, chopped fine 1 large
 
Dry mango powder 1 tsp
 
Plain yogurt, beaten 1 cup
 
Salt to taste
 
Fresh coriander for garnish 1 tbsp
 
For the Seasoning
 
Cumin seeds 1 tsp
 
Fenugreek seeds 5-6
 
Turmeric powder 1/2 tsp
 
Asaloetida 1/4 tsp
 
Curry leaves 5-6
 
Green chilies, chopped fine 2
 
Ginger chopped fine 1 inch piece
 
Oil of your choice 2 tsp

Directions

Roast the brinjals on the stove top or microwave.
Leave to cool ana peel off skin.
Meat the oil in a pressure pan ana place the cumin seeds in it.
When they begin to move add the rest of the seasoning , ingredients ana saute for 10 seconds.
Add the chopped onion and saute till they turn translucent.
In a big bowl mash the peeled aubergine.
Add salt and the seasoning' and mix well.
Transfer to a serving bowl and chill.
Garnish with chopped coriander before serving.
Serve with phulkas or parathas.
