Aubergine Caviar Recipe
Ingredients
| Aubergines- 2 large no-€™s, grilled till charred, peeled and coarsely chopped | ||
| Garlic cloves- 3 no-€™s, peeled and crushed | ||
| Tahina | 150 Milliliter | |
| Lemon- 3 no-€™s, freshly squeezed | ||
| Salt | 1/2 Teaspoon | |
| Pepper | 1 To taste | |
| Coriander leaves- as required | ||
| Black olives- as required | ||
| Lemon wedges- as required | ||
| Warm pita bread- as required | ||
Directions
MAKING
1. In an electric mixer, combine aubergine, garlic, half quantity tahina and half quantity lemon juice. Blend till smooth.
2. Add remaining lemon juice, salt, pepper and tahina and blend once more.
3. Remove on to a serving bowl and cling wrap. Refrigerate.
SERVING
4. Garnish with olives and coriander leaves and serve with warm pita bread and lemon wedges.
