Ingredients

 Aubergines- 2 large no-€™s, grilled till charred, peeled and coarsely chopped
 Garlic cloves- 3 no-€™s, peeled and crushed
 Tahina150 Milliliter
 Lemon- 3 no-€™s, freshly squeezed
 Salt1/2 Teaspoon
 Pepper1 To taste
 Coriander leaves- as required
 Black olives- as required
 Lemon wedges- as required
 Warm pita bread- as required

Directions

MAKING
1. In an electric mixer, combine aubergine, garlic, half quantity tahina and half quantity lemon juice. Blend till smooth.
2. Add remaining lemon juice, salt, pepper and tahina and blend once more.
3. Remove on to a serving bowl and cling wrap. Refrigerate.

SERVING
4. Garnish with olives and coriander leaves and serve with warm pita bread and lemon wedges.
